Today I was in the mood to do a little bit of baking, so I thought I would share this yummy recipe for Coconut Lime Muffins! I even decorated them in honor of Eurovision tonight, just using some plain paper and cocktail sticks.
The muffins are so simple to make and are a refreshing break from the traditional blueberry or chocolate chip. Although some of the ingredients might not be so common in everyones cupboard, nothing is very expensive or hard to find. Try some cream cheese frosting on top to add a little more sweetness if needed!
- 300g Self Raising Flour
- 150g Caster Sugar
- 1 tsp Baking Powder
- 1 Egg
- 200ml Coconut Milk
- 2 Limes
- 100ml Sunflower Oil
- 50g Dessicated Coconut
1. Combine the flour, baking powder and sugar in a large bowl.
2. In another bowl, combine the egg, coconut milk, dessicated coconut, zest of 2 limes, juice of 1/2 lime and oil.
3. Pour in to the dry mix and stir until the batter is smooth.
4. Place a generous dollop in a muffin case and place in the oven for 20 mins. DONE
